Biei wheat shop
Biei wheat is high in protein and has excellent baking properties in flavor and appearance.In addition, due to the stable production of three varieties, it is used in a wide variety of applications such as confectionery and noodles.
Characteristics of Biei Wheat
The peak harvest period is from July to August.
Long-bearded varieties such as “Yumechikara” (sown in autumn) and “Haruyokoi” (sown in spring) are rich in gluten, making them ideal for bread flour!
On the other hand, the beardless variety, such as “Kitahonami,” has less gluten and is mainly used for udon noodles.
Hokkaido accounts for 70% of the nation’s wheat production, 90% of which is “fall sown wheat.
Kitahonami, the most widely planted representative variety of fall wheat, accounts for 86% of fall wheat and 75% of all fall wheat in Hokkaido, and is mainly used to make medium-strength flour for udon noodles, cookies, and other products.
Recently popular “Yumechikara” is an extra-strength flour used for breads with a chunky texture and rich in gluten, which is not found in conventional domestic wheat.
It is also characterized by its long whiskers and the slightly reddish appearance of its ears.
Haruyokoi
It is moist and glutinous.
Kitahonami
It has a light flavor and is suitable for cakes, cookies, and other sweets as well as bread.
Yumechikara
The flavor is thin and the texture is strong and elastic.
